Notice the 2x4 on top of the center of the ceiling joists runs from the old roof and to the front of the new gable end. This 2x4 ties the middle of the new gable end to the old house. The bridging does this too, but not in one board length. The bridging is for connecting neighboring joists and not so much the length of the whole structure.
